Lemon Coconut Protein Balls

Ingredients

1 cup raw almonds
1 cup Medjool dates, pitted
1 serving vanilla protein powder (I used Vega Performance Protein; 41 g)
Juice from 1 lemon (about 2 tablespoons)
1/3 cup unsweetened shredded coconut (for rolling)

Directions

  1. Place almonds and protein powder in a food processor and process until a powder forms.
  2. Add dates and lemon juice, and process until dough forms.
  3. Roll into balls, then roll each into the shredded coconut.
  4. For a firmer consistency, store balls in an airtight container in the fridge.
